چکیده

Individual fish processing waste stream components can be used to make feed ingredients or other products. Waste stream components obtained from commercial fish processing plants included heads, viscera, frames, and skins from Alaska pollock (Theragra chalcogramma) and Pacijic cod (Gadus macrocephalus); and heads, and viscera from pink salmon (Oncorhynchus gorbuscha). The protein content of heads from all three species ranged from 13.9 to 16.4%; and the fat content rangedfrom 0.9 to 10.9%. Viscera protein content rangedfrom 13.0 to 15.3% and the fat content from 2.0 to 19.1%. After heating to 85C the percent soluble protein in salmon heads was digerent (P < 0.0s) frompollock or cod heads. Percent soluble protein ofpollock and cod skin increased 8 fold (P < 0.05) ajier the 8SC heat treatment. Connective tissue content was calculated from chemical determination of hydroxyproline content, and large differences in percent connective tissue content were found (1 % for pollock viscera to 46% for skin). Estimated rat PER values ranged from a low of 2.1 for skin to a high of 3.1 for viscera and fillet samples (P<O.OS).

Genetic Techniques Provide Evidence of Chinook Salmon Feeding on Walleye Pollock Offal

Declining runs of Chinook salmon in western Alaska have focused interest on the ocean condition and food habits of Chinook salmon in the Bering Sea, including potential mortality from bycatch in the pollock fishery. Examination of Chinook salmon stomach contents collected in the eastern Bering Sea by the U.S. North Pacific Groundfish Observer Program (NOAA Fisheries) revealed isolated pieces of...

Title : Effect Of Fish And Oil Nature On Frying Process And Nutritional

The modifications on a lean fish (cod Gadus morhua) and a fatty fish (farmed salmon Salmo salar) after the application of pan-frying using two types of oil with different lipid profile (extra virgin olive oil and sunflower oil) was the aim of this study. Fat content and total energetic value increased significantly after the frying process only in the lean fish, without relevant changes in the ...

Effects of Salt and Bittern on Inosinic acid- and Inosine-Degrading Enzyme Activity in Pacific Cod Muscle

Pacific cod (Gadus macrocephalus) inhabits the entire North Pacific region and supports the third largest fishery after walleye pollock (Theragra chalcogramma) and Atlantic cod (Gadus morhua). Although walleye pollock is often processed into various food products, Pacific and Atlantic cod are often preserved using salt for transport and consumption worldwide. Salt suppresses bacterial growth an...

Specific IgE to fish extracts does not predict allergy to specific species within an adult fish allergic population

BACKGROUND Fish is an important cause of food allergy. Studies on fish allergy are scarce and in most cases limited to serological evaluation. Our objective was to study patterns of self-reported allergy and tolerance to different commonly consumed fish species and its correlation to IgE sensitization to the same species. METHODS Thirty-eight adult fish allergic patients completed a questionn...
